Definition
Safety and Emergency Procedures is the term the industry uses for the practical safety content of cabin crew training. It is not a single course but a thread that runs through every stage of a cabin crew member's training life: the initial training course that leads to a cabin crew attestation under Part-CC, the aircraft type specific and operator conversion training an operator gives under ORO.CC.125, and then the recurrent training under ORO.CC.140 that keeps the whole thing current.
The content is what the name implies. Evacuation — commands, assertiveness, door and exit operation on each type, assisted evacuation, and the decision-making around when to initiate one. Fire and smoke — classification, extinguisher types, protective breathing equipment, and the fact that a cabin fire is fought on a clock measured in minutes. Decompression, including the use of portable oxygen and the sequencing of crew actions. Survival, both on land and on water, with the equipment carried on the operator's routes. First aid and the handling of incapacitation. And the emergency equipment itself, which is type-specific and must be located and operated from memory.
Most of this is trained and checked practically rather than examined on paper. Doors and exits are operated on representative training devices; evacuation is drilled; firefighting is performed with live or simulated fire; survival and ditching drills use the actual equipment. That practical character is why SEP dominates the scheduling and record-keeping burden of a cabin crew programme: it needs facilities, equipment and instructors, and every element has to be evidenced per crew member per type.
The facilities themselves are the constraint most organisations feel first. Door and exit drills need representative training devices matching the types in the fleet; firefighting needs a fire trainer and the extinguishers actually carried; ditching and survival drills need water. None of that scales elastically, and none of it can be substituted with classroom delivery, which is why SEP capacity rather than instructor availability is usually what sets the ceiling on how many crew an operator can train in a period.
A note on the abbreviation, because it collides. In cabin crew work SEP means Safety and Emergency Procedures. In flight crew licensing SEP means Single Engine Piston, as in the SEP class rating. The two are unrelated and the context determines which is meant, which is a good reason to write the phrase out when the reader might sit on either side of the line.
Why It Matters for Flight Schools
SEP is where the cabin crew training burden actually lives. An operator running three aircraft types trains and checks SEP elements per type, per crew member, on a recurring cycle, using physical equipment and drills that have to be scheduled against instructor and facility availability.
Because the elements are practical, the evidence is granular. It is not enough to record that a crew member attended recurrent training; the record needs to show which drills were performed, on which type, when, and with what result. That granularity is what makes the difference between a training file that answers an audit and one that merely suggests the training happened.
It is also what makes SEP currency a rostering constraint. A crew member whose type-specific SEP element has lapsed is not assignable on that type, regardless of what the rest of their file says.
